Heatalargeoven-safeskilletovermedium-highheat.
Searthegrouseonallsidesuntiltheskinisgoldenbrown,about3-4minutesperside.
RoasttheGrouse:
Transfertheskilletwiththegrousetothepreheatedoven.
Roastthegrouseforabout20-25minutesoruntiltheinternaltemperaturereaches165°F(74°C).
PreparetheSauce:
Whilethegrouseareroasting,deglazetheskilletwithchickenbrothandwhitewine,ifusing.
Allowtheliquidtosimmerandreducebyhalf,scrapingupanybrownedbitsfromthebottomoftheskillet.
Finishthesaucewithatablespoonofbutter,stirringuntilmeltedandincorporated.
RestandServe:
Oncethegrousearedoneroasting,removethemfromtheovenandletthemrestfor5-10minutes.
