Ingredients:

  • 2wholegrouse,cleanedandplucked

  • 2tablespoonsoliveoil

  • 2clovesgarlic,minced

  • 1teaspoonfreshthyme,chopped

  • 1teaspoonfreshrosemary,chopped

  • Saltandpeppertotaste

  • 1lemon,sliced

  • 2tablespoonsbutter

  • 1/2cupchickenbroth

  • 1/2cupwhitewine(optional)

Instructions:

  1. PreparetheGrouse:

    • Preheatyourovento375°F(190°C).

    • Rinsethegrouseundercoldwaterandpatthemdrywithpapertowels.

  2. SeasontheGrouse:

    • Rubthegrousewitholiveoil,ensuringtheyareevenlycoated.

    • Seasonbothinsideandoutsideofthegrousewithmincedgarlic,freshthyme,freshrosemary,salt,andpepper.

  3. StuffandTruss:

    • Stuffthecavityofeachgrousewithafewslicesoflemonandatablespoonofbutter.

    • Trussthegrousewithkitchentwinetokeeptheshapeintactwhileroasting.

  4. SeartheGrouse:

    • Heatalargeoven-safeskilletovermedium-highheat.

    • Searthegrouseonallsidesuntiltheskinisgoldenbrown,about3-4minutesperside.

  5. RoasttheGrouse:

    • Transfertheskilletwiththegrousetothepreheatedoven.

    • Roastthegrouseforabout20-25minutesoruntiltheinternaltemperaturereaches165°F(74°C).

  6. PreparetheSauce:

    • Whilethegrouseareroasting,deglazetheskilletwithchickenbrothandwhitewine,ifusing.

    • Allowtheliquidtosimmerandreducebyhalf,scrapingupanybrownedbitsfromthebottomoftheskillet.

    • Finishthesaucewithatablespoonofbutter,stirringuntilmeltedandincorporated.

  7. RestandServe:

    • Oncethegrousearedoneroasting,removethemfromtheovenandletthemrestfor5-10minutes.

    • Carvethegrouseandservewiththepansaucedrizzledoverthetop.
